Winemaking

The grape must begins fermentation with skins and seeds. The maceration period on the skins lasts approximately ten days.

Aging

Slow fermentation takes place in concrete tanks. After aging in stainless-steel tanks, the wine is bottled.

Appearance and Taste

Ruby red with garnet reflections. Intense bouquet of red fruits in jam and cherry. On the palate, juicy and fresh.

Food Pairings

High Valle Staffora cured meats, stuffed pasta, stewed guinea fowl with mushrooms, and medium-aged cheeses.
