Winemaking
The grapes undergo gentle pressing and are left in contact with the skins. Fermentation is stopped by cooling to preserve the wine’s sweetness.
Aging
Bottling is preceded by secondary fermentation in an autoclave to create the sparkle.
Appearance and Taste
Purple red with lively bubbles. The nose ranges from blackberry and sour cherry to hints of iris and violet. On the palate, it is intense, round, and fresh.
Food Pairings
Excellent with jam tarts, fresh fruit, and shortcrust cakes. Also delightful with medium-aged cheeses.
