Winemaking
Pressing of the grapes followed by short maceration in contact with the skins for 5-8 hours. The must is then separated from the skins for the fermentation in controlled temperature stainless steel tanks. The wine is filtered and stored in thermo regulated tanks. Before the bottling, in February the wine is re-fermented in autoclave to develop the carbon dioxide.
Imbottigliamento
L’imbottigliamento, che di solito avviene entro il mese di febbraio dell’anno successivo alla vendemmia, viene preceduto dalla rifermentazione del vino in autoclave per la presa di spuma.
