Winemaking

The harvested grapes are transferred to stainless steel tanks for a short maceration phase.

Aging

The prise de mousse occurs in pressurized stainless steel autoclaves.

Appearance and Taste

Vibrant pink with coppery hues. Notes of hawthorn, pomegranate and red currant, leading to a mandarin-like finish. The palate is delicate, showing excellent aromatic persistence and balance.

Food Pairings

Ideal with seafood risottos, salt cod and savoury tarts. Intriguing when paired with rabbit and fresh cheeses.
